    How to make a lean salad from fresh champignons? Prepare everything according to the list. It is permissible to replace Chinese cabbage with iceberg lettuce leaves, arugula or a mix of fresh leaves. I used cherry tomatoes, you can replace them with regular ones. Take any soft cheese to your taste: Adyghe cheese, feta cheese, etc. I have mozzarella.

    Rinse the Chinese cabbage and chop into medium-sized strips. Place in a deep salad bowl.

    Clean the champignons, cut off part of the stem, rinse and dry with paper towels. Cut the mushrooms into thin slices and add to the Chinese cabbage.

    Wash the cherry tomatoes, dry them and cut them into halves or quarters. If you have very small tomatoes, you can leave them whole. Place the cherry tomatoes in a salad bowl.

    Drain the brine from the mozzarella and cut the cheese into small pieces of the same size. For the salad, you can use any cheese you like.

    Drain the juice from canned corn. Cut the olives into two parts or leave them as is, if desired. Add corn and olives to the rest of the produce.

    Rinse the greens and chop finely. I used dill and parsley.

    In a separate small bowl, mix olive or regular vegetable oil, mustard, apple cider vinegar, salt and ground black pepper.

    Before serving, mix all the ingredients in the salad bowl and taste. If necessary, add salt and the missing component.
