Good afternoon! Lenten carrot cake is so beautiful and bright and at the same time simple, quick to prepare, and it’s also very tasty. And even if you don’t like carrots, its presence will not affect the taste and you will definitely like it! Grate the carrots into thin strips. Added sunflower oil, mixed well, lightly salted and covered with sugar. After about 10 minutes, the carrots released their juice and the carrot mass became quite liquid. It seemed to me that in such a dough, in order to get a crumbly crumb, the soda would have nothing to react with, so I added a tablespoon of lemon juice to the carrots. I sifted the flour and mixed it with soda. I combined the carrot mixture with flour. The dough is kneaded very easily with a spatula. And it turns out plastic, it doesn’t stick to your hands. I baked it in a parchment-lined tin with a diameter of 21 cm in an oven preheated to 180 °C for 35 minutes. The cake rose noticeably during the baking process. The children were skeptical that it contained carrots, but when they tried it, they were pleased and asked for more! I recommend everyone to try it and thank the author for the recipe! And of course I will bake again.
