A good recipe and, most importantly, at the right time - after all, it’s Lent! I prepared a similar version of lean borscht, but since everyone has different tastes, I changed it a little to suit my taste. Since I don’t like crispy cabbage in borscht, I first boiled the cabbage and then added tomato dressing. And in fact, I prefer not to grate beets, but to cut them into thin strips. I think it tastes better this way! In general, the combination of prunes and garlic in this borscht is ideal, the main thing is not to overdo it with garlic! And the color turned out beautiful - rich - just what I needed!!!

And we are making lean borscht with seaweed! Really delicious! The taste is unusual, but it looks like borscht with meat))) My mother has been on duty for many years, so we have already tried a bunch of recipes.. I don’t really like prunes, I wonder if the borscht will be sweet? Moreover, you cannot add sour cream or mayonnaise to a lean dish... I advise everyone to replace prunes with seaweed! Very, very tasty!

I think meat is not necessary for borscht. I often prepare first courses without meat, but sometimes I add mushrooms to them. You can dried them, pre-soak them, you can fresh them or fried them in vegetable oil. The taste of borscht changes, becomes richer and more aromatic. You can add celery root. I also often add sauerkraut; my family prefers borscht with this kind of cabbage.

To add sharpness and brightness of taste, I usually use Korean-style carrots. And I make sure to insist not for half an hour, but for the whole night.
