Lemon cupcakes Pink pigs in the year of the Pig-Boar

STEP 1

Necessary products.
STEP 2

DOUGH: Combine soft butter and sugar in a bowl.
STEP 3

Beat the butter and sugar with a mixer for a minute, then add the eggs and beat well again.
STEP 4

Add milk at room temperature, add lemon zest and juice. Mix everything at low mixer speed.
STEP 5

Add flour mixed with baking powder.
STEP 6

Knead into a homogeneous dough.
STEP 7

Place the dough into molds lined with paper capsules. You should get 12 cupcakes in total, each one will take about 1.5 tbsp. test.
STEP 8

Bake the cupcakes in an oven preheated to 180 degrees for 25-30 minutes. Remove the finished cupcakes from the oven and let them cool completely.
STEP 9

CREAM: Combine room temperature cream cheese, powdered sugar and pink gel food coloring.
STEP 10

Beat for a minute.
STEP 11

Approximately 0.5 tbsp. Place the cream in a separate bowl, add a couple of drops of red gel food coloring and stir until the color is uniform.
STEP 12

CUPCAKES: Spread the top of each cupcake with pink frosting.
STEP 13

DECORATION: Cut marshmallows like this: 6 pieces - lengthwise in half to make 12 “patch”, and another 6 pieces - in half and diagonally in half again to make 24 “ears”-triangles. Decorate the cupcakes with these preparations.
STEP 14

Place the red cream in a pastry bag, cut off a small tip and draw the eyes and mouth of the piglets.
STEP 15

Use melted chocolate to draw nostrils on the spots.
STEP 16
