STEP 1
How to make lecho from zucchini, tomatoes and bell peppers for the winter? First of all, prepare all the products according to the list. You will learn all the subtleties of preparing winter preparations by reading the article at the end of this recipe.
STEP 2
Peel the onions and garlic. Cut off the places where the stem attaches to the zucchini. Wash all vegetables thoroughly. Cut the bell peppers into two parts and remove the core and seeds. Cut the tomatoes into halves or quarters and cut off the hard white veins, if any.
STEP 3
The first step is to prepare the tomato base. To do this, cut the tomatoes into medium-sized pieces and place in a large bowl or pan. Place on the stove and bring to a boil. Reduce heat to moderate and simmer, stirring occasionally, for about 15-20 minutes. How to choose a pan, read the article below the steps.
STEP 4
Meanwhile, take care of the rest of the vegetables. Cut the peppers into thin half rings or feathers.
STEP 5
Chop the onion into half rings or a little smaller.
STEP 6
Next comes the line of zucchini. If you have ripe fruits, peel them and remove hard seeds. I used young vegetables, so I left them as is for the recipe. Cut the zucchini into circles, and then each circle into two to four pieces.
STEP 7
Grind the finished tomatoes into puree using a blender. Boil the tomatoes for about 10-15 minutes over low heat.
STEP 8
Add bell pepper, onion, salt, sugar, vegetable oil and peppercorns to the tomato mixture. Boil for 15 minutes.
STEP 9
Add zucchini and cook for 15 to 40 minutes. Focus on the desired degree of readiness of all components. If you like crunchy vegetables in winter salads, then 15-20 minutes will be enough. I cooked for about half an hour.
STEP 10
Add the garlic, previously passed through a press. If desired, at this stage you can add finely chopped hot chili peppers. Boil everything together for 5 minutes. Pour in the vinegar, mix the lecho well and after 2-3 minutes remove from the heat.
STEP 11
Place the finished lecho in sterilized jars, close with sterile lids and turn the top upside down. Wrap in a warm blanket and leave until completely cooled at room temperature. STEP 12
