    How to make jellied pie with plums using kefir? The recipe is very simple, and the result is wonderful. To begin, prepare all the necessary ingredients according to the list. Take the highest grade flour. Kefir 3.2% fat. It is advisable to use refined, odorless sunflower oil, because olive oil can add unnecessary bitterness to the pie. Large, selected eggs are needed. If the eggs are small, use one more.

    First, prepare the plums. Wash them, cut them in half and remove the seeds. Then you can leave the plums in the form of halves, like I did, or cut them into thinner slices. Now decide for yourself what you like best. The variety of plums can be very different, from red plums, like mine, to prunes. The main thing is that they are dense enough and do not spread when baking.

    Now prepare the dough. Combine chicken eggs with sugar and vanilla sugar and beat with a mixer until fluffy. The mass should increase in size by 3-4 times and lighten.

    Pour in room temperature kefir and sunflower oil. Whisk everything again. The mass will liquefy greatly, but that’s how it should be.

    Sift the flour and add it into the dough in parts, stirring the mixture with a mixer at low speed or with a whisk until smooth. You may need more or less flour depending on the size of the eggs, the moisture content of the kefir and the quality of the flour itself. Therefore, focus on consistency: the dough should be thick, but fluid.

    At the very end, add baking powder and mix the dough again.

    Place the dough in a pan lined with parchment and greased with butter (mine is 24 cm in diameter). Place plums on top. Bake the pie in a preheated oven for 40-45 minutes at 180°C. The surface of the pie will rise and brown slightly. Determine the exact baking time and temperature based on your oven.

To say that I fell in love with the pie using this recipe is an understatement! I fell in love with it myself, I made my family and friends fall in love with it, in a word, the pie has become a favorite of this plum autumn! It is absolutely easy to prepare, there are just no complications!!! and simply indecently incredible in taste. Delicate, loose, moist dough, which absorbed the plum sourness, while retaining its taste with a hint of vanilla. The only thing I added were pieces of confectionery chocolate to the dough, and on the pie itself, after a little soaking in sugar syrup, sent almond petals, which gave it a very beautiful aesthetic appearance. Good for baking before the arrival of unexpected guests, for dessert with tea and just to pamper the family with something delicious! Bon appetit everyone)

Now it's plum season, and I decided to make this wonderful pie again!!! I did everything according to the recipe. The pie is prepared very quickly, and the result is magnificent. I doubt I’ll write a better and more sincere comment than the previous ones! The pie is truly delicious and easy to prepare! I recommend it, even my two-year-old pre-puppies liked it. Thank you very much to the author for the recipe. Instead of baking powder, I added half a teaspoon of soda on my own, since the recipe contains kefir and a pinch of cinnamon and nutmeg.
