Italian Vegetable Pie Spiral

Step-by-step preparation
STEP 1
How to make a spiral vegetable pie? Prepare the ingredients for the base. Butter should be at room temperature. Wheat flour, premium.
STEP 2
In a deep bowl, combine flour and butter. Add baking powder and a pinch of salt. The baking powder is responsible here for making the base even more crumbly. To highlight the taste of the cake, you can add half a spoonful of sugar.
STEP 3
Mix the ingredients with your hands until sand crumbs form.
STEP 4
The dough is bad but should come together into a ball.
STEP 5
There is no need to grease the baking dish with oil. Spread the dough over the pan, forming a border 3 centimeters high. My form is 16 centimeters in diameter. Cover the form with the dough with film and put it in the refrigerator for at least half an hour.
STEP 6
Prepare the ingredients for the filling. Tomatoes need to be ripe, sweet and meaty. The success of the pie will depend on their quality and taste.
STEP 7
Wash the tomatoes and grind them in a blender. Pour the mixture into a saucepan and bring to a boil over low heat.
STEP 8
Pour in olive oil, add finely grated garlic, salt, pepper and dried Italian herbs.
STEP 9
Over low heat, stirring, bring the mixture until thickened. It took me about 15 minutes for the mixture to start to hold the groove from the spatula. Remove the filling from the heat and let it cool.
STEP 10
Meanwhile, prepare the ingredients for the top. Zucchini should be young, with tender skin and seeds. Rinse the vegetables under running water. Peel the carrots.
STEP 11
Using a slicer, cut the vegetables into thin long strips.
STEP 12
Spread the cooled filling over the base. Grate the cheese on top using a fine grater.
STEP 13
Now comes the fun part! Starting from the center, lay out the vegetable slices in a spiral, alternating vegetables until all the filling is covered. For convenience, you can cut the slices in half. The decorating stage took me exactly 30 minutes.
STEP 14
Brush the tops of the vegetables with a little olive oil and bake in the oven for 40 minutes at 180°C.
STEP 15
Before serving, you can brush the top of the pie with olive oil again.
