Idaho potatoes in the oven
Step-by-step preparation
STEP 1

In order to cook Idaho potatoes in the oven, you need to prepare the necessary ingredients so that you don’t miss or forget anything. Choose potatoes of medium size and the correct shape so that they can be conveniently cut into slices. Rinse the tubers thoroughly with a stiff brush, since the potatoes will bake along with the skin, it is important to clean the skin as much as possible.
STEP 2

In a spacious bowl, combine vegetable oil, mustard, salt, ground paprika, ketchup (any degree of heat), garlic (you can take fresh, crushed into a paste, but I prefer the granulated aroma, it is not so aggressive and sharp). Add clean and finely chopped herbs: parsley and dill (only the soft tops are needed, the hard part, the stems must be removed).
STEP 4

Stir and add potatoes, cut into slices and previously blanched for 2-3 minutes in boiling water, into this oily, spicy mixture. Toss the potatoes with a spoon or your hands until every inch of the potato is coated with the “sauce.”
STEP 5

Place potato wedges in a single layer on a baking sheet. Parchment paper is not necessary, since the abundance of oil will prevent the potatoes from sticking to the baking sheet, but to be on the safe side, you can use parchment paper or special baking mats.
STEP 6

Place the potatoes in an oven preheated to 200 degrees and bake for about 30 minutes. There is no need to stir it. When cooked, Idaho potatoes should be nicely browned and soft inside.
