STEP 1
How to make honey cake? Start cooking by baking the crusts. Prepare food for them. I used a 250 ml glass for food. Honey, as the main ingredient, choose natural, tasty and aromatic, the taste of the finished dish will depend on this. Also take high-quality butter, without vegetable additives in the composition.
STEP 2
How to make cakes? Take a saucepan with a thick bottom and high sides. Put butter in it, add sugar, add honey. Place the ladle over low heat and cook, stirring, until it boils. As soon as this happens, pour soda into the mixture.
STEP 3
Without ceasing to stir, cook the mixture for about 2 minutes. It will first turn white and increase in volume, and then settle and acquire a caramel color. Remove the saucepan from the heat.
STEP 4
Cool the resulting mass to room temperature. Then beat the eggs into it. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 5
Mix the mixture well with a whisk until smooth. It will turn out dark in color, as it should be.
STEP 6
Start adding sifted flour to the saucepan in portions, kneading well after each.
STEP 7
The result will be a sticky, medium-thick dough that can be spread with a spoon. You may need more or less flour than stated in the recipe, use the consistency of the dough as a guide.
STEP 8
Take a baking sheet (I have 30*40cm) and cover it with parchment. Spread half the dough over it in a thin layer.
STEP 9
Bake the crust in the oven, preheated to 180°C for 10-15 minutes. The exact time will depend on the features of your oven. It will rise slightly and spring back when pressed. Remove the finished cake from the oven and remove from the baking sheet. Bake the second cake in the same way. Leave them to cool.
STEP 10
While the cakes are cooling, prepare the cream. Prepare food for him. Use sour cream with a fat content of at least 20%. To make the cream more stable, you can first weigh it in gauze. For sour cream-based cream, it is better to use powder rather than sugar - it will dissolve faster and will not squeak on your teeth.
STEP 11
How to make cream? Add powdered sugar to the sour cream.
STEP 12
Using a whisk, stir the ingredients until smooth. I don't use a mixer because the heat when whipping makes the sour cream thinner. The cream is ready, all that remains is to assemble the cake.
STEP 13
Remove the finished cakes from the paper and place them on top of each other. Cut them in half and place the halves on top of each other as well. Trim the edges of the resulting rectangle evenly. Do not throw away the scraps - they will be used as crumbs for sprinkling the top.
STEP 14
Coat the trimmed cakes with sour cream.
STEP 15
Do not coat the top cake; put the cream for it in the refrigerator. Place a board on top and place a weight on it. Place the cake layers and weights in the refrigerator overnight. This way you will get completely smooth and neat cakes. But this is not a required step, you can skip it.
STEP 16
After overnight in the refrigerator, spread the remaining cream over the top crust. If you did not level the cakes, but just assembled the cake, then put it in the refrigerator for a couple of hours to soak.
STEP 17
Grind the trimmings in any convenient way until they become fine crumbs. I used a rolling pin.
STEP 18
Sprinkle the top of the honey cake with crumbs. I trimmed the edges again to make the cakes evener.
STEP 19
Cut the resulting cake into pastries. I got 4 pieces.
STEP 20
Serve the cakes to the table. You can decorate them with berries, chocolate or nuts. Bon appetit!
