STEP 1
How to make turkey dumplings? Prepare the ingredients needed to make the dough. Let’s start working with it, so that when the dough is under the film, we don’t waste time and start filling the dumplings. It is also worth noting that since the flour is different (I used the highest grade), it also absorbs water differently. This means that you may need more or less flour or water, so be guided by the consistency of the dough
STEP 2
Sift the flour into a deep container, add salt, mix the dry ingredients. Make a well in the middle of the flour and pour boiling water into it, knead the dough with a spoon. Then continue kneading the dough, but with your hands. When the dough comes together in one lump, transfer it to a work surface and knead the dumpling dough for another 7 minutes. Next, place the dough back into the same container, which is covered with cling film. Leave the dough alone for 30 minutes.
STEP 3
Now prepare the filling for the dumplings. To do this, wash the turkey and dry it with paper towels.
STEP 4
Now cut it into pieces, maybe large, just so that these pieces fit into the meat grinder.
STEP 5
Peel the onion and cut into medium pieces. Pass the chopped turkey and onion through a meat grinder. Add salt and ground black pepper to the minced meat. If you want the dumplings to be juicy, add a little water, about a spoon, to the minced meat. Mix the minced meat until you get a homogeneous mass.
STEP 6
Now you can return to the test. Divide the dough into several parts. Take one part for work, leave the rest under the film so that the dough does not dry out. Roll out the dough thinly with a rolling pin. Using a glass, for example, press circles into the dough. Place ground turkey in the center of each circle.
STEP 7
Now make the dumplings. To do this, the edges of the circle around the perimeter of the dumplings can be moistened with water so that they stick together well. Next, fold the circle in half, make tucks, then connect the two ends, securing them well. Stick all the dumplings in this way.
STEP 8
Ready dumplings can be boiled immediately. In this case, bring the water to a boil, salt it, add a bay leaf and place the dumplings in it. After they rise to the surface of the water, cook them for another 3-6 minutes (depending on the size of the dumplings). Or the dumplings can be frozen and boiled if necessary. You can store them in a regular plastic bag.
