Homemade kefir cheese
Step-by-step preparation
STEP 1
How to make homemade cheese from kefir? Prepare the necessary products. My milk and kefir are store-bought, both have 2.5% fat content.
STEP 2
Break the eggs, add a little kefir to them, about a glass, and salt.
STEP 3
Using a whisk, mix them well until smooth.
STEP 4
Pour milk and kefir into a large saucepan. It’s better to take a pot with a thick bottom, I have a regular pan, it got a little burnt.
STEP 5
Place the pan with dairy products on the stove and turn on low heat.
STEP 6
Pour the eggs into the pan, mix them with the main mass.
STEP 7
Cook the mixture until it boils, stirring constantly so that it does not burn. Gradually, flakes will begin to form and whey will separate.
STEP 8
Continue cooking for 10 minutes. The mass should completely curl up.
STEP 9
Place a colander over the pan, place gauze in it, folded in several layers. Drain the cheese mixture in a colander and leave for 5 minutes.
STEP 10
Fold the ends of the gauze over the cheese and place a flat plate on top. Place a weight on the plate, such as a jar of water. Wait for the cheese to cool completely and put this entire structure in the refrigerator overnight.
STEP 11
In the morning, take out the colander with cheese. Remove the cheese from the gauze. It is ready to eat. Bon appetit!
