Good afternoon A good recipe, but I want to give you a little advice: in order for the ham to compact well, you need to cool it without removing it from the ham maker for 12 hours. Then it will turn out dense and will not crumble when cutting. And yet, some of the meat can be twisted in a meat grinder, then the structure will be more uniform.

Wonderful recipe!!! I recently bought a ham maker, but I couldn’t get around to it! Well, now I’ll definitely try to cook it - everything is accessible and simple! Well, and most importantly, it will be done with your own hands and without any chemicals! Thank you very much for the recipe!!!!

You don’t have ham, but a loose cutlet. First of all, you need to knead all the minced meat until there are meat threads that will tie all the minced meat together. And for the ham taste, you need to put nitrite salt instead of table salt, or at least 50%. Then the taste will be ham, and it will be stored longer , and it will not be gray, but pink. You need to cook at t-80* for 3.5 -4 hours. And you need to blast cool it at the end. Put it in the refrigerator overnight, remove the springs in the morning, take it out of the ham maker. Yes, and you need to stuff it tightly : 2-3 spoons at a time and tamping with a potato masher on top and so on until the very top, and not “pour out” as written in the recipe.
