STEP 1
How to cook bean soup with chicken? Let's prepare all the products. Chicken or chicken fillet should be washed under cold water. You can remove the skin from it, but this is not necessary.
STEP 2
Sort the beans well, rinse and soak in cold water for at least 5 hours. It is not recommended to soak for a longer period of time, because the beneficial substances will begin to wash out. Then drain the water and rinse the beans again.
STEP 3
Place beans and chicken in a saucepan and add filtered or bottled water. Place on medium heat, bring to a boil, skim off the foam. Salt and add peppercorns. Reduce heat and cook the broth for an hour and a half. Keep an eye on the pan; beans produce a lot of foam when cooking!
STEP 4
While the chicken broth is cooking, let's fry it. To do this, you first need to peel the onions and carrots, then cut the onions into cubes and grate the carrots on a fine grater.
STEP 5
I always fry with a mixture of oils - vegetable and butter, so the oil does not burn, and the taste becomes more delicate.
STEP 6
Fry over low heat for 5 minutes, stirring constantly.
STEP 7
At the end, add tomato paste and fry for another 5 minutes.
STEP 8
An hour and a half has already passed since the start of cooking the broth; we need to add potatoes. Pre-clean and cut it into cubes. Before adding potatoes to the soup, you need to remove the finished leg.
STEP 9
Cook the potatoes until tender and add our frying mixture to the soup. Important! Frying with tomato paste or tomatoes is always added after the potatoes are cooked; acid prevents this from happening! Taste for salt and add if necessary.
STEP 10
Separate the meat from the bones and cut it into small pieces. Add it to our chicken soup.
STEP 11
Bring the soup to a boil, add the bay leaf and invite everyone to the table!
