    Place the cottage cheese in a bowl and mash it a little with a fork. Do not use very dry cottage cheese. Soft, without excess moisture, fatty cottage cheese (at least 5-9%) is best suited.

    Cut butter at room temperature into cubes and add to cottage cheese. Mix thoroughly.

    Then, in a separate bowl, sift the flour mixed with baking powder and vanilla sugar.

    Add flour to the curd and butter mixture. Knead the elastic dough with your hands. Roll it into a ball. Wrap it in film. Place it in the refrigerator for 1.5 hours. (The dough can be stored in the freezer for 3 weeks!)

    Sprinkle the working surface (board) with a little flour. Roll out the dough to 1cm thickness. Use a mold or glass to cut out shapes.

    Pour sugar into a plate and dip each figure in the sugar, pressing lightly with your fingers.

    Reheat the oven to 190-200 C degrees. Place the cookies on a baking sheet lined with parchment paper, sugar side up. Bake in an oven preheated to 200°C until golden brown, about 15 minutes.
