Homemade chebureks with crispy crust

STEP 1
We prepare all the ingredients for making chebureks.
STEP 2
Sift into a large bowl through a 500 g sieve. flour, add 1 teaspoon. sugar and 1 tsp. salt and mix. Brew the dough and pour 250 ml into a bowl with flour. hot water while mixing with a mixer.
STEP 3
Add 50 grams of mayonnaise to the dough and continue kneading with a mixer.
STEP 4
Next, knead the dough well with your hands for about 10 minutes.
STEP 5
Knead the dough with your hands until it becomes dense and put it in a bag for 30 minutes.
STEP 6
Coarsely chop 500 gr. onions, put them in a bowl and pour boiling water over them, after which we immediately drain the water through a colander.
STEP 7
Prepare the minced meat and grind 500 g in a meat grinder. lamb, for convenience alternating meat with onions.
STEP 8
Add chopped fat tail fat to the minced meat, cumin to taste, salt, red and black pepper.
STEP 9
Add a little meat broth and mix well.
STEP 10
Cut off the desired piece of dough and roll it out with a rolling pin to the desired thickness.
STEP 11
Using a suitable lid, cut out the desired shape for the cheburek.
STEP 12
Spread the minced meat evenly on one side of the flatbread, moisten the edges with water and bring the dough together, pressing with a fork.
STEP 13
Turn on the stove and heat the vegetable oil in a deep frying pan to 180-190 °C.
STEP 14
We make sure that there is no gap left at the junction of the dough and drop two pasties into boiling oil.
STEP 15
Fry the pasties on both sides until golden brown, for two minutes each. After frying, place the pasties on a paper towel so that they absorb excess oil, and then place them on a plate.
