Herring with vegetables baked in parchment

A tasty, healthy and very inexpensive dish made from your favorite herring. On average, it costs a little more than a hundred rubles, taking into account the fact that I buy expensive herring from Olyutor. We have it for 80 rubles per kilo. But you can just as easily buy a regular one for 45 rubles. It's just smaller. This dish has its roots in the hungry nineties. There are empty shelves in stores, empty wallets in bags. But the sea is right there, nearby! There was always the opportunity to get something out of him! Carrots and onions were always on sale. And you don’t need any oil in this dish! Those who did not have an oven simply steamed this fish in a large saucepan or frying pan with a small amount of water. But still, it turns out the most delicious when baked in the oven, and precisely in parchment (baking paper). I don’t recommend baking in foil; when wrapped, microcracks form in it, through which juice leaks out.

  1. STEP 1

    STEP 1

Here is such a simple set of products.

  2. STEP 2

    STEP 2

    Chop the onions and carrots.

  3. STEP 3

    STEP 3

Stir, salt and pepper. Add bay leaf.

  4. STEP 4

    STEP 4

Thaw the herring, clean the scales, if necessary, remove the gills and entrails without cutting the belly (through the head). Wash well and dry with paper towels. Salt and pepper inside and out, put the caviar inside and stuff tightly with the filling.

  5. STEP 5

    STEP 5

Then place each fish on a sheet of parchment or baking paper. Wrap the fish tightly in two layers of paper. To be safe, I even grabbed a stapler.

  6. STEP 6

    STEP 6

Cover a baking sheet with paper or foil, place the fish on it, add a little water (but you can do without it), and put it in a cold oven. Turn it on at 180 degrees and bake for 50 minutes. After that, turn off the oven and leave the fish there for another hour. During this time, it will cool down to a warm state and will be even tastier! Unwrap it, put it on a dish and decorate with herbs. Bon appetit!

Of course, I love herring, but salted. In the nineties, they really tried to fry. The smell was unbearable, now there is a hood, but I don’t want to deal with hot cooking of herring. The flounder can still stand the smell of herring, but not when fried. I'm afraid that when baked, the same aromas will remain.

Our herring is fresh, there is no smell! Or rather, there is a very tasty smell of fish with vegetables. Only expired fish or fish that have been stored incorrectly stink. Thank God, I have never come across anything like this!

What a score. Considering our region, the Urals Federal District, fish reaches the table only after defrosting (I mean sea fish), I don’t think that the fish is properly stored throughout the entire journey.

IrenDV, the fish looks very appetizing. This stuffed fish is very tasty and healthy. As I understand it, this fish is frozen and not salted? I like the advice to clean it over the head - all the filling will be inside and the fish will be whole and beautiful. Thank you very much for the recipe!
