Very tasty sweet pie with different fillings! Gubadiya with kort is a traditional Tatar pie. On the one hand, this is not a complicated pastry at all, on the other hand, the result is a very tasty pie that will definitely surprise your guests and make a pleasant impression on them; everyone will find their favorite taste in it. The intrigue of this pastry is created by its name, especially the “court” filling. Not everyone knows about such a product, and it is difficult to find it in the store. But kort is easy to prepare at home from ordinary natural cottage cheese with the addition of milk, butter and sugar.

    Put a tablespoon of sugar, a tablespoon of flour into a glass, add dry yeast and pour half a glass of warm water. Stir and leave the mixture in a warm place for 15 minutes. In the meantime, prepare the other ingredients. Melt the butter in a water bath and cool to room temperature. We heat the milk to a temperature of about 35 degrees, you can do this in the microwave.

    Sift the flour. Pour the yeast mixture into a deep bowl, beat in a chicken egg, add melted butter, warm milk, and salt. Mix. Add sifted flour. Add it in parts so that the dough takes as much flour as it needs. It may take a little more flour.

    You should get a smooth ball. Place it in a bowl, stretch the cling film over the top and set it aside while we prepare the fillings. Place the dough in a warm place.

    Let's start preparing the court. Place cottage cheese in a metal cup and fill it with milk. We put it on fire. When the mixture boils, reduce the heat to medium and cook, stirring the mixture so that it does not burn. The cottage cheese will first begin to melt and the liquid will evaporate.

    When the mass begins to thicken, add sugar and butter, mix and simmer again until the mass begins to darken and thicken.

    When there is practically no liquid left, turn off the heat and leave the cup on the stove to dry the court.

    Wash the rice and boil until tender in water with the addition of sugar (a tablespoon) and salt (a pinch). The main thing is not to overcook the rice; it should be crumbly.

    Wash the chicken eggs and boil them hard. Cool, peel and finely chop with a knife or pass through an egg slicer.

    For the filling, take dried fruits such as raisins and dried apricots; if desired, you can add prunes. Wash the dried fruits well, add hot water and leave for 10-15 minutes until they steam and become soft. Drain the raisins and dry the dried apricots on a paper towel. Make a streusel for sprinkling the pie. In a bowl, grind the flour into crumbs with a piece of butter, you can add sugar to taste.

    Let's start assembling the pie. Divide the dough into two parts. One is larger, the other is smaller. Roll out a large piece of dough on a floured table into a thin circle.

    Place it in a greased pan so that the edges hang down. Place some of the cooled rice on the bottom and sprinkle with raisins.
