Step-by-step preparation
STEP 1
How to make green bell peppers for the winter? Prepare your food. Since the main thing in this appetizer is green bell pepper, choose this green vegetable. Compared to other ingredients, it should be much larger. Rinse the bell pepper thoroughly under running water, remove the stalks and seeds. Cut the pepper into rings or strips, as you like.
STEP 2
Also wash the tomatoes and cut out the stem. Cut the tomatoes into halves, leaving the skin on. Pass the tomatoes through a meat grinder or blend with a blender until pureed.
STEP 3
Wash the carrots, peel and grate on a coarse grater.
STEP 4
Peel the onions and cut into half rings.
STEP 5
Place the tomato puree into a saucepan with a thick bottom. Add chopped bell peppers there too. Wash the hot pepper and finely chop it. add to pan.
STEP 6
Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally. Reduce heat and simmer for about 10 minutes. Remove the resulting foam with a slotted spoon. Add prepared carrots and onions, stir. Simmer for about 25 minutes, stirring with a spoon. Add salt, sugar and vegetable oil. Stir again. Simmer for about 15 minutes more.
STEP 7
Pour in the vinegar, let the vegetables boil and cook for about 5 minutes. Then remove the pan with vegetables from the heat.
STEP 8
Immediately place the mixture into sterile jars. The jars must be sterilized in advance in any convenient way: in a water bath or in the oven, boil the lids and dry. Read more about sterilization and winter preparations at the end of the recipe.
STEP 9
Place the salad jars in a large saucepan with water, the bottom of which is lined with a cloth, and sterilize them at the rate of 15 minutes per 500 ml jar. Cover the jars with lids. Turn upside down, cover with a blanket and let cool at room temperature. Store the preparation in a cool pantry. Bon appetit!
