STEP 1
How to bake Gougères French cheese buns? Prepare all the necessary ingredients for cooking. You can use any hard cheese, but the taste of the buns will depend on its type. But you don’t need to take large eggs, the dough will be too liquid. Eggs of category C-1 will be just right.
STEP 2
Pour milk, water into a saucepan, add butter and salt.
STEP 3
Place the pan over medium heat and bring to a boil, stirring until the salt and butter are completely dissolved.
STEP 4
Reduce heat to low and slowly add sifted flour, stirring quickly. Continue stirring vigorously until the dough is cooked and forms a dense, homogeneous dough. This will take approximately 2-3 minutes.
STEP 5
Remove from heat and continue stirring until the dough has cooled so you don't burn yourself when you touch it. This is necessary so that the introduced eggs do not cook when added to the dough.
STEP 6
Our dough has cooled down, start adding eggs, be sure to one at a time, otherwise you won’t be able to make the right dough. Add one egg and mix thoroughly until smooth. It will be a little difficult at first, but with each addition of eggs it will get easier.
STEP 7
Add three times and mix thoroughly too. This is the dough after adding the second egg.
STEP 8
Add the third egg to the dough and mix thoroughly too. In general, choux pastry really likes thorough mixing. This gives it the right consistency, which means it will make excellent products.
STEP 9
Add the last egg and knead the dough well one last time. It should not be liquid or very thick. If it slowly flows off the spoon in a big wave, it is ready. Turn on the oven to preheat to 180 degrees.
STEP 10
Grate the cheese on a fine grater and add to the dough, setting aside a little, we will need it later.
STEP 11
Mix well until the cheese is evenly distributed in the dough.
STEP 12
Line a baking tray with baking paper or a silicone mat. Using a spoon or pastry bag, pipe identical buns at a distance of 2-3 centimeters, as they will increase during baking.
STEP 13
Sprinkle the tops of the buns with grated cheese.
STEP 14
Before you start baking buns, remember one rule - under no circumstances open the door for the first 25 minutes, and even better before cooking. Even if there is a hurricane, earthquake or alien invasion outside, do not open the oven door. As soon as you open the door suddenly, your buns will fall out. Place in a hot oven and bake at 180 degrees for 30-40 minutes, until golden brown.
STEP 15
Remove from oven, cool and serve.
