  1. STEP 1

    STEP 1

Let's prepare the ingredients for the pie. Kukh is baked from shortcrust pastry. The butter should be soft. To do this, the butter must be removed from the refrigerator in advance; it does not need to be melted, otherwise the dough will turn out hard and dry after baking. It is enough to leave the oil at room temperature for 20 minutes.

  2. STEP 2

    STEP 2

Place softened butter cut into cubes in a deep bowl. Pour sugar into a bowl with butter. Grind sugar and butter into crumbs. A little sugar with butter and a couple of tablespoons of flour should be immediately set aside to prepare the streusel.

  3. STEP 3

    STEP 3

Beat the eggs into the bowl with the shortbread crumbs, one at a time, stirring the mixture with a mixer each time. Mix the mixture until it becomes homogeneous in consistency.

  4. STEP 4

    STEP 4

Add sifted flour combined with baking powder. Knead the dough until it turns out smooth, manageable and elastic.

  5. STEP 5

    STEP 5

To get the desired result, you can add a couple of tablespoons of flour to make the dough denser, or, conversely, ice water to the dough for smoothness.

  6. STEP 6

    STEP 6

Roll out the dough into a thin flat cake, no more than 0.3 cm thick, the size of the mold in which the pie will be baked. Transfer the dough into the mold and send it to cool in the refrigerator in the mold for 30 minutes.

  7. STEP 7

    STEP 7

Meanwhile, you can make the streusel by rubbing a knob of butter with the sugar and flour until it forms fine crumbs. In Germany, when baking kuch, some housewives do not add sugar when preparing the streusel, but sprinkle it on the cake immediately after removing it from the oven. We also cool the streusel in the refrigerator.

  8. STEP 8

    STEP 8

We take out the dough, grease it with thick jam so that the jam does not flow during baking. Sprinkle streusel on top.

  9. STEP 9

    STEP 9

Preheat the oven to 200 degrees. Bake the pie for about 20 minutes. Let the pie cool and serve with tea. Enjoy your tea!

For tea today I baked a German pie with jam. I kneaded the dough according to the recipe and didn’t let it hang out for a long time. I used pitted cherry jam. Streusel is easy to make. I knew the pie was ready by the aroma and light golden crust around the edges of the pie. This is a great pie for tea! Everyone really liked it!
