STEP 1
Ingredients needed to prepare Georgian eggplant appetizer with satsivi paste.
STEP 2
Cut the eggplants into strips about one centimeter thick, place them in a convenient container, sprinkle salt on all sides so that the slices give juice and remove the bitterness from them.
STEP 3
Grind two hundred and fifty grams of walnuts with a blender in a convenient container.
STEP 4
Add to the container with the walnuts three cloves of garlic, fifty grams of parsley, fifty grams of cilantro, half a teaspoon of red hot pepper, half a teaspoon of saffron, one teaspoon of suneli hops, salt to taste and grind until smooth.
STEP 5
Roughly chop the onion head.
STEP 6
Add a head of chopped onion to the container with the previous ingredients, pour in five tablespoons of vegetable oil, chop and get homemade Georgian-style satsivi paste, which we transfer to a plate, then add one teaspoon of grape vinegar.
STEP 7
Place the eggplants, squeezed out of their juice, and fry them in a frying pan heated on the stove with vegetable oil added to it.
STEP 8
Fry the eggplants on both sides until golden brown and place all excess fat on a napkin to drain.
STEP 9
We serve the eggplants beautifully on a plate, combining them with satsivi pasta.
STEP 10
For contrast, we decorate the prepared eggplant appetizer with Georgian-style satsivi paste with tomato.
