    Ingredients you will need: Butter, 82% fat, cold. Almond and wheat flour. Salt, sugar. If the eggs are large, you can just use the yolk. Orange zest - optional.

    Combine flour, salt, sugar and cold butter.

    I grind it into crumbs with my hands. You can use a blender in a bowl with knives.

    I add the zest (only the bright part, the white part will be bitter) and eggs (or rather the floor) and quickly knead the dough.

    It should turn out plastic, homogeneous, not sticky.

    Between two sheets of parchment or Teflon mats, roll out the dough to a thickness of 5 mm and to the desired size.

    The size of my mold is 21 cm in diameter, height 3. I put the dough in the refrigerator for 1 hour to rest and cool.

    Then I put the chilled dough in the mold, level it and put it in the refrigerator while the filling is prepared.

    I collect the scraps into a ball, wrap them in a bag and put them in the freezer.

    For the filling, I will use raspberries and cherries in equal proportions, but you can use absolutely any berries (cherries, sweet cherries, raspberries, blueberries, currants, blueberries...) either frozen or fresh. If they are frozen, as in my case, I put them on a sieve to allow the juice to drain. Also, corn starch and sugar. Spices - optional. I have: cinnamon, nutmeg, ginger.

    I combine everything, mix it carefully...

    And our filling is ready.

    I spread it onto the cooled dough and level it out.

    I grate a frozen lump of dough on top using a coarse grater. I put it in a preheated oven at 170 degrees for 40-45 minutes.

    But it’s better to focus on your oven and the beautiful, golden crust. I let it cool completely and remove it from the mold.
