I, my mother, and my husband really liked this version of eggs in pepper, but the child is still small) I followed your advice and did not strictly adhere to the recipe. I added sausage and parsley to the bottom of half the peppers, and cheese and parsley to the rest. I beat in one egg at a time, since I did not use halves of large peppers, but small whole peppers, cutting out the tails with seeds. I sprinkled dried basil and ground smoked paprika on top, it turned out very tasty. I baked scrambled eggs in bell pepper for 35 minutes so that the yolk was hard, we like it better) The dish is very simple and at the same time original and satisfying. It will look beautiful even at a party or at a buffet table as an appetizer. By the way, I also tried cooking scrambled eggs in tomatoes, but I liked the taste of baked peppers better)
