Gently wash the caviar under a gentle stream of cold water to prevent it from falling apart. Clean it of films. To do this, rub the caviar through a sieve.

    Transfer the caviar to a large, deep bowl.

    Peel the onions, chop coarsely and place in a blender bowl along with sauerkraut. Grind everything well to a paste.

I found a bag of crucian carp caviar in the freezer and decided to fry cutlets from fish caviar according to this recipe. You can separate the caviar from the films using a meat grinder, whisk or fork. But I prefer, like the author, to rub through a sieve. After this manipulation I got 900 g of caviar. Using the site's calculator, I recalculated the quantities of other products. Instead of sauerkraut, I used pickled cabbage. I also did it with sauerkraut, in both cases the taste of cabbage is not felt at all. But the cutlets are not hard, but very juicy and soft. From the greens I added some green onions and dried dill. My “dough” turned out runny due to the fact that the caviar was frozen, but I didn’t add more flour. Everyone was treated to pancakes). They are very tasty! Usually fried caviar is a little tough, but thanks to the addition of cabbage, the cutlets will definitely be soft. And another piece of advice: don’t try raw caviar for salt, it’s fraught with consequences. It’s better to fry one pancake and taste it, and then adjust the salt and spices.

I made cutlets from fish roe. I had some crucian carp caviar and reduced the amount of other ingredients accordingly. Grind the onion and sauerkraut using a blender. Due to the small volume of caviar, I didn’t want to bother with the sieve; I beat the washed caviar with a regular fork, while the film is separated from the eggs and removed with a fork. To the caviar I added chopped onion and cabbage, an egg, flour, salt, and a little green onion. I mixed everything and fried the caviar pancakes in heated sunflower oil on both sides. Then I put them in a saucepan and simmered them a little with some water. The cutlets turned out bright, soft, tasty, you can’t feel the cabbage taste. Thanks to the author for the recipe!
