Fish fillet in batter

The fish does not need to be fried in a frying pan, but rather in deep fat. To prepare fish in batter, it is better to choose fillets of white, lean fish, for example, pollock (like mine); hake, cod, and pike perch are also suitable. Red fish can also be prepared this way, but it still tastes better when baked in the oven.

    Marinade. To prepare the marinade we will need: vegetable oil (I used sunflower oil, but you can also use olive oil, whichever you like best), lemon juice, herbs (dill or parsley), ground black pepper and salt.

    Place the prepared fish pieces in a bowl. Season with salt, pepper, lemon juice and vegetable oil, and add finely chopped parsley.

    Mix everything well and marinate in the refrigerator for 25-30 minutes.

    Batter. To prepare the batter, we need dark or light beer, flour, vegetable oil and salt.

    Pour beer into a deep bowl. Sift the flour and add it to the beer in small portions, stirring thoroughly each time with a whisk so that there are no lumps.

    Mix everything thoroughly until smooth. The batter should be semi-thick so that it sticks to the fish and does not drip off it. If your batter is too liquid, you can add another 1-2 tbsp. l. flour.

    Fry the battered fish in a frying pan in vegetable oil until golden brown. Approximately 6-7 minutes on each side.

I still had a glass of dark beer left over from preparing another dish. I used it to fry fish fillets in batter. I decided to cook pike perch, it has white dietary meat and few bones. I had already cut the fillet, all I had to do was remove the skin and cut into portions. Marinated in a mixture of lemon juice, vegetable oil, paprika, salt and spices for fish. I didn’t use fresh parsley, my daughter doesn’t like it. The batter is mixed very simply and quickly. I added a little more flour to make it thicker. I had my doubts that the batter would stick to the oiled fish, but it “stuck” very well. Fish fried in beer batter is perfect! I got some unique flavorful fish filled pies! The alcohol had all evaporated, leaving only a pleasant bitterness. Tasty and filling, we loved it!
