  1. STEP 1

    STEP 1

How to make shortbread pie with raspberry jam? Measure out the required ingredients. To prepare shortcrust pastry, the butter and milk must be sufficiently cold.

  2. STEP 2

    STEP 2

Mix flour with baking powder and sift into a bowl of suitable size.

  3. STEP 3

    STEP 3

    Combine flour with sugar, mix.

  4. STEP 4

    STEP 4

Grate cold butter into the flour mixture using a coarse grater.

  5. STEP 5

    STEP 5

Rub everything quickly with your hands.

  6. STEP 6

    STEP 6

Beat the egg with a fork with cold milk until smooth.

  7. STEP 7

    STEP 7

Make a well in the butter-flour crumbs and pour in the egg beaten with milk. Stir with a spoon first.

  8. STEP 8

    STEP 8

Then quickly mix everything together with your hands, forming the dough into a ball. There is no need to knead the dough for a long time and thoroughly so that the butter does not melt from the warmth of your hands. The dough may not be perfectly homogeneous, with small inclusions of oil. The faster the shortbread dough is mixed, the more crumbly the finished baked goods will be. Wrap the dough in cling film and refrigerate for 1 hour.

  9. STEP 9

    STEP 9

Form the cake immediately on parchment so that later it is convenient to transfer it to a baking sheet. Roll out the chilled dough into a round layer 0.5-0.8 mm thick.

  10. STEP 10

    STEP 10

Leave the middle of the dough for the sweet filling. Divide the remaining distance into 12 symmetrical parts.

  11. STEP 11

    STEP 11

For each part, make cuts of the same width on both sides. Also make cuts in the middle, but without cutting all the way through.

  12. STEP 12

    STEP 12

Bend the middle part of each segment towards the middle.

  13. STEP 13

    STEP 13

Then roll the roll towards you.

  14. STEP 14

    STEP 14

Connect the ends of the side cut strips at the bottom of the roll.

  15. STEP 15

    STEP 15

Shape the entire cake in a similar manner.

  16. STEP 16

    STEP 16

Place any thick jam in the middle of the dough. You can take berry or fruit jam, confiture or jam.

  17. STEP 17

    STEP 17

Sprinkle the circumference of the filling with almond petals.

  18. STEP 18

    STEP 18

To frost the pie, lightly whisk the egg and milk until smooth.

  19. STEP 19

    STEP 19

Transfer the parchment containing the cake to a baking sheet. Using a pastry brush, brush the edges of the pie with beaten egg.

  20. STEP 20

    STEP 20

Bake the jam pie in an oven preheated to 190C for about 25 minutes until golden brown. Do not overbake so that the edges of the pie do not dry out. Baking time may vary, as it depends on the operating characteristics of each oven.

  21. STEP 21

    STEP 21

Cut the cooled finished pie into portions and serve. Bon appetit!

I decided to bake this pie with sorrel. The pie also seems to be sweet, but the sorrel filling gives it a unique uniqueness and sophistication! In any case, it seems so to me. I decorated the top in my own way, baked the rest of the dough too, but there was nowhere to put it, so we ate it just like that. This is such a wonderful, tasty, summer dessert!!!

Yulechka, thank you for another delicious recipe! I also make this one, only with apricot jam. True, I don’t connect the outer strips with a heart, but simply lay them in a “jack”. The pie is very tender, easy to prepare, you can use any nuts and jam or thick preserves for decoration - it goes well with any sweet filling! I prepare a little more dough, I highly recommend it to everyone!
