You can add bell peppers, potatoes, and tomatoes to eggplants and zucchini. It turns out to be a complete dish.

It would be useful if this dish were simply baked and without mayonnaise. But I don’t see much benefit. The caloric content is off the charts! I really don’t understand why already fried vegetables need to be baked, especially with mayonnaise.
