Eggplant peacock tail appetizer quick and easy

STEP 1
Required ingredients.
STEP 2
Cut the eggplants into slices diagonally.
STEP 3
Heat vegetable oil in a frying pan. Fry the eggplants on both sides. Place on a paper towel to absorb excess oil.
STEP 4
Prepare the dressing. Mix mayonnaise, finely grated cheese, and garlic squeezed through a press.
STEP 5
Place the eggplants in a circle on a wide dish, alternating with small sprigs of dill. The piece with the stalk will be the peacock's head.
STEP 6
Cut the tomatoes into slices. Brush the eggplants with the dressing and place a tomato slice on top of each.
STEP 7
Cut the cucumbers into slices. Arrange the remaining eggplants beautifully in the shape of a peacock's tail, brush with dressing, and add tomatoes. Place cucumber slices on the tomato mugs.
STEP 8
Cut the olives in half and place the halves on the cucumbers. The appetizer is ready to serve!
