STEP 1
How to make eggplant caviar in a slow cooker for the winter? Products we will need

Peel the eggplants, cut into cubes and pour cold water to remove the bitterness.
STEP 3
Then squeeze out the eggplant pieces, put them in a multicooker bowl, pour in vegetable oil, put them in the “STEW” mode for 15 minutes, the total cooking time is 1.5 hours.

After 15 minutes, add the onion, cut into half rings, into the multicooker.

and grated carrots, simmer for another 15 minutes.

After 15 minutes, add the diced peppers and simmer for the remaining time. 10 minutes before the end of cooking, add chopped garlic and salt; if you are afraid that the caviar will not stand, then add 1 tablespoon of vinegar and mix everything. But even without vinegar it’s great value!
STEP 8
Roll into clean jars.
