I have long wanted to make eggplant caviar in a slow cooker for the winter. Exactly in this form - in cubes). The texture of vegetables has its own charm. First of all, I peeled, cut and sprinkled the eggplants with salt. While they were getting rid of the bitterness, I chopped the remaining vegetables. I cut everything into cubes except carrots. We like it grated. First, I fried the eggplants with onions, and then laid out the rest of the vegetables. The only seasoning I used was freshly ground black pepper, it is very aromatic. Additionally, I added tomato paste to the caviar. At the end I still added a spoonful of 9% vinegar. After 1.5 hours of stewing, the result was excellent vegetable caviar steamed until soft! It is very juicy, has an appetizing aroma and bright color! This preparation is incredibly tasty!
