    How to make stuffed eggplants baked in the oven with minced meat? Prepare the indicated products. It is better to choose small eggplants, with a whole strong skin. You can use any minced meat to suit your taste. Hard cheese or any other cheese that, when baked, forms an even, appetizing crust. Salt and ground black pepper, as well as other spices to taste. Prepare a baking dish in the oven.

    Wash the eggplants and dry with a towel. Cut each vegetable lengthwise into two equal parts. Using a sharp knife, make a slit along the edges of the eggplant, about 5 cm thick from the edge. Then make cross-shaped cuts throughout the pulp, but try not to damage the skin of the vegetable. Salt each vegetable and leave aside. After ten minutes, rinse the eggplants and remove the pulp from each half and cut.

    Heat a frying pan, pour in vegetable oil. Fry the chopped onion and garlic until translucent. Place the minced meat in a frying pan and, breaking it up with a wooden spatula, fry until the color changes. Try not to make the pieces large.

    Add chopped eggplant pulp and chopped tomato to the minced meat. Fry everything together until the liquid evaporates. Add salt and pepper to taste.

Summer is the time to stuff all kinds of vegetables. Eggplant boats are a great option for dinner. It didn’t take me much time, but the result was excellent. Instead of minced meat, I used frozen meatballs that I prepared for soup. I'll have to cook the soup from something else) I put two meatballs in each boat, and fried vegetables on top. First, I baked the eggplant boats until they were ready, and at the end I sprinkled them with grated cheese and baked them until the latter melted. The taste of these boats is simply magnificent, the meat fills you with satiety, and the vegetables are delicious in any form. I recommend this recipe!

Everything is clearly described, the correct dosage. I baked it for 40 minutes without cheese (180 degrees), then another 2x15 minutes with cheese (Gouda, 48 months mature). 15 minutes was not enough. In principle, you can really bake with this cheese from the very beginning, it won’t burn. I won’t say that this is a dish for every day. Glad it worked the first time. Thanks for the good recipe!
