STEP 1
How to make stuffed eggplants baked in the oven with minced meat? Prepare the indicated products. It is better to choose small eggplants, with a whole strong skin. You can use any minced meat to suit your taste. Hard cheese or any other cheese that, when baked, forms an even, appetizing crust. Salt and ground black pepper, as well as other spices to taste. Prepare a baking dish in the oven.
STEP 2
Wash the eggplants and dry with a towel. Cut each vegetable lengthwise into two equal parts. Using a sharp knife, make a slit along the edges of the eggplant, about 5 cm thick from the edge. Then make cross-shaped cuts throughout the pulp, but try not to damage the skin of the vegetable. Salt each vegetable and leave aside. After ten minutes, rinse the eggplants and remove the pulp from each half and cut.
STEP 3
Heat a frying pan, pour in vegetable oil. Fry the chopped onion and garlic until translucent. Place the minced meat in a frying pan and, breaking it up with a wooden spatula, fry until the color changes. Try not to make the pieces large.
STEP 4
Add chopped eggplant pulp and chopped tomato to the minced meat. Fry everything together until the liquid evaporates. Add salt and pepper to taste.
STEP 5
When the mixture is ready, add chopped dill and stir. Turn on the oven to preheat to 180 degrees.
STEP 6
Place the eggplant boats in a baking dish. It can be pre-lubricated with vegetable oil, or it can be covered with baking paper.
STEP 7
Place the prepared minced meat filling into each eggplant half.
STEP 8
Sprinkle with grated cheese and place the baking dish with stuffed eggplants in a preheated oven for 50 - 60 minutes.
STEP 9
Serve the finished stuffed eggplants hot. Also, these filled boats are also good warm. This is an independent dish that does not need a side dish.
