Eggplant appetizer with beans and bell pepper

STEP 1
To prepare a delicious, hearty snack of blueberries and beans for the winter, we prepare the necessary products with spices.
STEP 2
Cut one and a half kilograms of tomatoes into large cubes, after removing the stems, and grind in a meat grinder along with two hundred grams of garlic.
STEP 3
Place the twisted tomatoes in a large saucepan.
STEP 4
Pour five hundred milliliters of vegetable oil into the pan.
STEP 5
Add one hundred and fifty grams of sugar, seventy grams of salt and allspice and black peppercorns to taste for flavor.
STEP 6
Place eight hundred grams of coarsely grated carrots in a saucepan and mix all the ingredients very well.
STEP 7
Place the pan on the stove and bring to a boil over medium heat, covering it with a lid, remembering to stir.
STEP 8
Cut half a kilogram of bell pepper into strips.
STEP 9
Cut two kilograms of blueberries into half rings.
STEP 10
Finely chop and chop quite finely one hot chili pepper.
STEP 11
Pour hot chili pepper into a saucepan boiling with tomatoes and add chopped eggplants.
STEP 12
Place the bell pepper in the pan, mix thoroughly, cover with a lid and bring to a boil.
STEP 13
Place the boiled beans in parts into the boiling pan with the vegetables and, stirring thoroughly, cook for twenty minutes, covering the pan with a lid, not forgetting to stir.
STEP 14
After twenty minutes, pour one hundred milliliters of 9% vinegar into the pan with vegetables and, after mixing all the ingredients well, cover the pan with a lid and cook for about another seven minutes.
STEP 15
Place the prepared snack hot in sterilized jars, immediately close with sterile lids and turn over, then cover with a warm blanket or blanket and leave to cool for several hours.
