STEP 1
How to bake Easter cake in the oven? Prepare the products according to the list. You can take live yeast, then you will need 3 times more of it than dry yeast. Instead of dried fruits, you can take candied fruits or lemon (orange) zest.
STEP 2
Mix yeast with warm milk and sugar, leave for 15-20 minutes. The milk should be warm, but not scalding. Milk that is too hot will kill the yeast.
STEP 3
Wash the raisins and dried cherries, dry them and pour in cognac, this will make the baked goods more flavorful and last longer.
STEP 4
Prepare the choux pastry. To do this, bring the butter and milk to a boil in a saucepan over medium heat.
STEP 5
Remove the melted butter and milk from the heat and add the flour. Stir and leave the mixture to cool to about 50 degrees.
STEP 6
For the main dough, beat 4 eggs into a container convenient for beating, add 2 yolks, add sugar and vanilla sugar. Beat everything together until fluffy white mass using a mixer.
STEP 7
Add the risen yeast to the beaten eggs; it should definitely rise. If this does not happen, then the yeast is not working. They will have to be replaced.
STEP 8
Add the choux pastry mixture to the main mixture and stir until smooth. Add sour cream, butter and 20 ml of vegetable oil, stir.
STEP 9
Add sifted flour in portions and knead the dough. Be sure to sift the flour to remove debris and oxygenate the dough. This will make the cake more airy and fluffy. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough.
STEP 10
Cover the kneaded dough and leave to rise in a warm place for 1-1.5 hours.
STEP 11
Knead the risen dough, grease your hands and work surface with vegetable oil, and stir in the dried fruits.
STEP 12
Leave the dough to rise a second time.
STEP 13
Divide the dough into the cake pans. From this amount of ingredients I got 5 medium and 2 small cake pans. Place the molds with the dough in a warm place for 40 minutes until they double in size. Turn on the oven to 180 degrees in advance.
STEP 14
Place the risen cakes in an oven preheated to 180 degrees for 40-60 minutes. The exact time depends on the features of your oven. Check the readiness of the cakes with a wooden skewer or toothpick. To do this, insert it into the middle of the cake and immediately take it out: if it comes out dry, then the cake can be removed.
STEP 15
While the yeast cakes are baking, make the glaze. To do this, beat the egg whites with 2 tbsp until white and fluffy. spoons of lemon juice and powdered sugar.
STEP 16
Remove the finished cakes from the molds.
STEP 17
Dip the hot cakes into the egg glaze.
STEP 18
