Easter cookies with apricot look so amazing that I, of course, could not “pass by” such an unusual cookie. Considering that the fresh apricot season had already begun, I used them rather than canned ones. The cookie dough was very soft and greasy. Before rolling it out, I placed it in the refrigerator for a while. Then I began to roll it out directly on the baking mat. It stuck to the rolling pin a lot, I covered it with a sheet of parchment, and everything rolled out perfectly. The cookies turned out thin, crispy and very tasty on their own. I didn't make frosting because I had some cream cheese left over from the cake. I piped it around the apricots using a piping bag. They turned out not to be cookies, but cakes!! The combination of shortcrust pastry, curd cream and fresh sweet apricot with a slight sourness is simply amazing! Of course, if you cover the cookies with glaze (as in the recipe), then they can be transported in a box without fear that the appearance will deteriorate, and if you use canned apricots, their shelf life will increase. The same cannot be said about my cakes - they cannot be transported or stored for a long time. But this did not upset anyone; everything was quickly eaten. I really liked the design of the fried egg and the taste of the apricot cookies. I admire the creativity of the author of this idea and express my gratitude, thank you!
