STEP 1

How to make dough for pies and flatbreads in a dry frying pan? Prepare all the necessary ingredients according to the list. If you want to make sweet pies or dessert cakes from such dough, then you need to add sugar in the right amount to the ingredients.
STEP 2

For making dough, it is better to use kefir that is not very fresh, slightly sour. To do this, you can remove it from the refrigerator in advance and leave it in a warm place for a couple of hours so that it begins to sour a little.
STEP 3

Pour wheat flour into a deep bowl. Flour must be sifted; this is done not only to remove foreign particles that may be in it (garbage, threads and insect larvae), but also to saturate the flour with oxygen, which makes the flour lighter and products made from it fluffy. Add baking soda and stir dry ingredients. There is no need to quench soda with vinegar; kefir contains enough acid for the necessary reaction.
STEP 4

Beat chicken eggs into a separate bowl, add salt, if necessary, and the required amount of sugar (if you want to make sweet pastries from the dough). Pour room temperature kefir and vegetable oil into a bowl. Using a hand whisk or mixer, mix the ingredients until the mixture is homogeneous in consistency.
STEP 5

Pour the liquid into the bowl with the dry ingredients and knead the dough. If necessary, add sifted wheat flour in small parts. Continue kneading the dough with your hands, and you need to do this as long as possible so that the gluten has time to release from the flour, the dough should become soft and stop sticking to your hands. Attention! You may need less or more flour, depending on its properties.
STEP 6

Roll the dough into a ball, place it in a bowl, cover it with cling film, or you can simply put the dough in a plastic bag. Leave the dough on the counter to rest for half an hour. This must be done so that the gluten swells and the dough becomes obedient to work with. After time, the dough is ready for making products from it and frying flatbreads or pies. While the dough is resting, you can prepare the filling for the pies according to your taste and desire. Bon appetit!
