Flour must be sifted; this is done not only to remove foreign particles that may be in it (garbage, threads and insect larvae), but also to saturate the flour with oxygen, which makes the flour lighter and products made from it fluffy. Add baking soda and stir dry ingredients. There is no need to quench soda with vinegar; kefir contains enough acid for the necessary reaction.

We bought a tandoor for our dacha, and, of course, immediately tried it in practice. The most interesting thing was to bake cakes in it. The calculator showed that you need to take 1.5 eggs. I added 2 C2 eggs to the dough. I used about 410 grams of flour (high grade). The dough rested for 50 minutes. It turned out elastic, soft, pliable. The flatbreads were prepared in the tandoor for about 2.5-3 minutes. They turned out very lush. Their taste is quite neutral, so you can eat them with anything.
