Good day everyone! The other day I bought cottage cheese, I was looking for a recipe to cook something... Well, I found a recipe for diet muffins. I didn’t have a goal to cook something specifically dietary, the idea of using oatmeal in combination with cottage cheese seemed interesting .I didn’t bake using only oatmeal, I added 1:1 1st grade wheat flour. And also, two tablespoons of corn starch to add airiness to the finished baked goods (starch perfectly removes excess moisture). Mix the flour well with a teaspoon of soda. There will be enough acid in the cottage cheese for the soda to react. In a deep bowl, combine the cottage cheese, eggs and sugar (reduced to 100 g) with vanillin (for my taste, it is vanillin that gives the cottage cheese a pleasant aroma) and beat it thoroughly with a submersible blender. The result was a uniform creamy consistency. In addition, it takes much less time than rubbing cottage cheese through a sieve and is not as labor-intensive as washing a meat grinder after using it. Just immerse the blender in a cup of warm water and add a drop of dishwashing detergent and voila - it’s already clean, just rinse. I mixed flour into the curd mass with a wooden spatula. I didn’t bake the cupcakes, but decided to bake the casserole in a round pan with a diameter of 26 cm. I thought, that you should get an interesting texture if you crush regular cookies into crumbs and make a base, and sprinkle a small amount on top. For my electric oven, the optimal temperature for baking is 180 degrees, this time I did not increase the heat to 200 degrees, it seemed too high. At 180 degrees, my casserole was ready in 25 minutes. It acquired a beautiful golden brown crust, and the crumbs looked appetizing and elegant. The cut turned out to be a very beautiful porous structure. The taste is pleasant, cottage cheese, the cookie topping is crispy and gives a peculiar contrast to the soft casserole. Good , that I reduced the amount of sugar to 100 g, still 150 g per 400 g of cottage cheese would have turned out cloying. In general, it turned out very tasty! I saved the recipe in my bookmarks. To be honest, I didn’t really hope for success, and I’m very glad that I was wrong. Firstly, by changing the number of servings, I very quickly obtained the required composition of products (increased to 10), replaced sugar with a teaspoon of stevia, and added about 70 grams of raisins. Placed in silicone molds and baked for 30 minutes. I am very pleased with the result. The only fatty product is cottage cheese with 1% fat content. I understand that oatmeal is a carbohydrate, but sometimes I want something baked. Thanks for the recipe! I've never come across one like this before!

Thanks for the recipe! Of course, it’s difficult to call cupcakes dietetic, but if you replace sugar with stevia or another sweet sweetener, you’ll get a very normal composition
