There’s so much I haven’t cooked with zucchini this summer) But I haven’t fried pancakes yet. I decided to correct this misunderstanding) Moreover, my vines of zucchini in the garden pleased me with the latest harvest. Only the zucchini grew large, so I peeled the skin, put the hard pulp into jam, and put the centers with soft seeds in a blender and ground them into a homogeneous puree. The weight of the zucchini turned out to be less than in the recipe, but there is a special calculator to correctly calculate the amount of products) I mixed the dough as for regular pancakes, I got a homogeneous fluid consistency. The pancakes were baked without problems, did not tear, did not burn. They turned out smooth and beautiful. It's a pleasure to eat them! The pancakes came out soft, tender and tasty. I highly recommend everyone to make these pancakes. They were great for breakfast and snacks.

Great recipe! Thanks for the step by step photos. Zucchini is generally an excellent universal product :) besides, this dish is prepared very quickly and tasty. Here you can still fantasize about the filling. It will go great with seafood, I think so)
