STEP 1

We start preparing pancakes by cutting up zucchini - our main ingredient. First, wash them, then peel off the skin, grate them and put them in a deep bowl. Salt and pepper to taste, add eggs, mix everything well. Separately, pour milk into the sour cream, mix and add to the zucchini mass, mix until smooth.
STEP 2

Now it’s the turn of the flour, which first needs to be sifted. You need to add enough flour so that the mass becomes liquid, like any pancake dough. You need to add in small portions and stir thoroughly all the time so that no lumps form.
STEP 3

At the very end, add vegetable oil and mix. Our dough is ready, we did a good job with this. Now let's see how to fry zucchini pancakes.
STEP 4

To do this, heat the frying pan well with the addition of vegetable oil, pour a small portion of dough onto it using a ladle and level it well along the bottom, turning the frying pan in a circle. Bake the pancakes on both sides until cooked and beautifully browned. We use all the dough.
STEP 5

These pancakes are good served with feta cheese or cheese, fresh tomatoes and herbs. With filling they will be much more satisfying, although I like to eat them just like that, especially when I really miss them. Bon appetit!
