    Cut the crusts off a slice of white bread, pour milk over the crumb and leave to swell.

    In a bowl, combine the minced meat, an egg, a slice of bread squeezed out of the milk, garlic, dill, salt and pepper. If you wish, you can add a pre-chopped and finely chopped small onion, fresh or fried in a frying pan, to the minced meat.

    Stir the minced meat until smooth. If the minced meat turns out too runny, add 1-2 tbsp. l. semolina, mix and leave for 15 minutes for the cereal to swell. The semolina will absorb excess moisture and the minced meat will become more viscous.

    With wet hands, form the minced meat into small round patties.

    Heat a little vegetable oil in a frying pan and fry the meatballs over medium heat for about 5 minutes until golden brown. During the frying process, turn the cutlets over to the other side. If you don’t want to waste time on frying or you need a more dietary option, you can put them in a mold raw, pour in the sauce and bake in the oven for about 40-45 minutes.     While the cutlets are frying, prepare the sauce. You can use any broth: chicken, meat or vegetable. If you don't have broth, you can replace it with plain water.

    Dilute starch in 50 ml of cold meat broth so that there are no lumps.

    My sauce turned out to be quite liquid, but when baked it will become much thicker thanks to the starch. You can adjust the amount of sauce to suit your tastes. If you want the cutlets to be completely covered with sauce, make 1.5 times more. I wanted the sauce to reach about halfway through the cutlets.

We love meat cutlets. I think baked ones are healthier, so this time I made cutlets in sour cream sauce in the oven. Moreover, my children respect “white” sauces and gravies more. I made the minced meat myself from fresh pork. In addition to garlic, I added an onion for more juiciness and taste. White bread was soaked in 10% cream. I diluted the sour cream by 1/3 with the same cream. I didn’t fry the cutlets, I immediately put them in the pan. The sauce was diluted with chicken broth. I added curry, a pinch of turmeric and ground vegetables to it. It turned out fragrant). I baked the cutlets in sour cream sauce for exactly an hour. During this time, the sauce boiled down and thickened, and the tops of the cutlets browned. The cutlets turned out to be very juicy, soft, tender, but at the same time a little spicy, with a hint of spice. The creamy taste gives them a special twist! I recommend!
