Cottage cheese for cheesecakes does not have to be fresh; yesterday’s cottage cheese is also suitable, which you no longer want to eat in its pure form, and in cheesecakes it will be subject to heat treatment. For children, it is better to use a natural and fresh product; for ladies on a diet, low-fat cottage cheese is suitable. Place cottage cheese in a bowl.     Add sugar and salt to taste. Beat in chicken eggs and add thick sour cream. Wash the eggs with baking soda first to remove any possible contamination. Using a blender (if the cottage cheese is grainy) or a hand mixer, grind the ingredients together until the curd mass is homogeneous in consistency, the sugar should be completely dissolved. If desired, you can add additives such as dried fruits, pieces of fruit or berries.

I ground the cottage cheese through a sieve to obtain a homogeneous consistency; I increased the quantity of products thanks to the site’s calculator, which is very convenient. After preparing the dough, I let it rest a little, 15 minutes. I recommend preparing it according to this recipe. The cheesecakes turn out so homemade and delicious, I also added a pinch of vanilla, the aromas are such that you don’t want to go to work, it’s so cozy with a cup of tea or coffee. We really love cheesecakes for breakfast and just like that) This recipe with the addition of sour cream caught my attention. I had 500g of cottage cheese, using a special calculator I recalculated the amount of products for the main one. There was quite a lot of dough, there were enough cheesecakes for the whole day. That morning the electricity went out, so I just kneaded the dough with a fork. The process is not long at all, only grains of cottage cheese remain. But this is not a problem, the cheesecakes did not become any worse. I took a little more sugar and also added a drop of vanillin. The dough turned out to be such a consistency that you couldn’t roll it into a sausage. I placed lumps of dough in flour and formed cakes with my hands. Cheesecakes literally grow in a hot frying pan! They immediately become fluffy, airy, and increase in size. I periodically removed the flour from the pan with a paper towel to prevent it from burning. The cheesecakes turned out very tasty, beautiful, rosy. Curd grains do not spoil the cheesecakes at all.
