Curd cake with shortbread and blueberries without baking
Ingredients
Step-by-step preparation
STEP 1
Products for the mousse: cottage cheese, cream, gelatin, sugar and blueberries.
STEP 2
Products for the base: cookies butter
STEP 3
The cookies must be crushed to crumbs.
STEP 4
Mix with butter.
STEP 5
Place the mixture in a springform pan, pressing tightly. We put it in the refrigerator.
STEP 6
We make puree from blueberries.
STEP 7
Divide the cottage cheese mixture into 2 parts, one should be slightly larger than the other. Mix blueberry puree into the smaller portion.
STEP 8
Soak gelatin in water. Combine cream with sugar. Stir until sugar dissolves. Heat the cream a little in a saucepan and mix it with the swollen gelatin until dissolved.
STEP 9
Add half of the gelatin mixture to each part of the cream.
STEP 10
Remove the base from the refrigerator and spread the cream on it, alternating blue and white.
STEP 11
I topped the cake with white chocolate ganache and decorated the cake with strawberries. For the ganache, I dissolved 100 grams of white chocolate in 100 ml of cream and sent it to cool in the refrigerator for a day, then beat it with a mixer and spread it on the cake.
