STEP 1
How to bake a cupcake with jam in the oven using kefir? Prepare the necessary products. You can take kefir of any fat content, this is not at all critical. You can replace it with yogurt and even fermented baked milk. Old, thick jam is better suited for this type of cake. If it is liquid, then increase the amount of flour by another half glass. I used strawberry. You don’t need to put sugar at all, there is enough of it in the jam. Turn on the oven to 180 degrees in advance.
STEP 2
Beat eggs with sugar until fluffy and light. It is better to do this with a mixer. Add kefir and jam to the eggs and mix well with a whisk. The mixer can be removed; it will no longer be useful.
STEP 3
Pour the sifted flour into the dough and stir until smooth. Thanks to sifting, the flour will be saturated with oxygen, and the finished cake will turn out fluffier and more tender.
STEP 4
Add soda. There is no need to quench it, since the dough contains kefir, its acid will serve as a quencher for soda.
STEP 5
Pour the dough into the baking dish. Pre-grease the mold with vegetable oil.
STEP 6
Bake the jam cake in the oven at 180°C for about 45 minutes. The exact time depends on the features of your oven. Determine readiness with a wooden stick. Pierce the cake in the center; if the stick is dry when removing, the cake is ready. To elevate this simple cake, you can layer it with cream or jam. Sour cream is best when whipped with sugar. You can also top the cake with chocolate glaze. Enjoy your tea!
