STEP 1

How to bake a crumb cake with jam in the oven? Very easy and fast. To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. I have large, choice eggs. If the eggs are small, you can use 3 pieces, but keep in mind that in this case you may need more flour. STEP 2

Beat soft butter with sugar with a mixer until fluffy. Depending on the sweetness of the filling, you can use less sugar. In principle, any jam is already sweet by definition. Therefore, you can add less sugar to the dough. I had sour red and black currant jam, so this amount of sugar was enough. The pie didn't turn out too sweet.
STEP 3

Add eggs and beat again. To better combine the ingredients, the eggs should also be at room temperature. Wash the eggs with soda first, as there may be harmful bacteria on their surface.
STEP 4

Add flour sifted with salt, baking powder and vanilla. Knead into a soft, elastic shortbread dough, adding a little more flour if necessary. As soon as the dough begins to pull away from the sides of the bowl and stops sticking to your hands, it is ready. STEP 5

Divide the finished dough into two unequal parts. Roll the smaller part into a ball, wrap it in a bag and put it in the freezer for 30 minutes.
STEP 6

Roll out most of the dough on siliconized high-quality parchment into a not very thin layer the size of an oven tray.

Place jam on the dough and smooth it out.
STEP 8

STEP 9

Cool the finished shortbread pie with jam and crumbs on top and cut into portions with a sharp knife. Bon appetit!
