Cottage cheese casserole in sour cream with raisins and vanilla flavor

STEP 1

It is better to use fatty cottage cheese for casserole - I use 9% cottage cheese. To prepare the dough, you need to put it in a convenient bowl and grind it with an immersion blender or rub it through a sieve so that it becomes homogeneous and does not contain lumps.
STEP 2

In a separate bowl, beat eggs, sugar, vanilla sugar and salt. Beat everything well with a mixer.
STEP 3

Melt the butter over low heat or in the microwave, add it to the egg mixture, mix everything well.
STEP 4

Pour the liquid mixture into the cottage cheese and mix with a mixer.
STEP 5

Soak the raisins in hot water for 5 minutes to steam them. Then drain the water and rinse the raisins well to remove all possible debris. After this, the raisins need to be dried a little by placing them on a flat saucer or blotting them with a paper towel. Pour the prepared raisins into a small bowl, add all the semolina there and roll the raisins well in it. This will prevent the raisins from settling to the bottom while the casserole is baking.
STEP 6

Add raisins and semolina to the curd mixture. Also add 3 tablespoons of sour cream to the dough. Mix gently with a spoon.
STEP 7

Preheat the oven to 180 degrees. Place the baking dish in it for 5 minutes to warm up. If we preheat the pan, the casserole will not stick to the bottom. Grease the mold with butter and sprinkle with semolina. Instead of semolina, you can use flour or breadcrumbs. Pour the dough into the prepared baking dish, spreading it into an even layer. Spread the top with sour cream mixed with powdered sugar.
STEP 8

Place the pan with the dough in the oven for 30-40 minutes. Readiness can be checked in the classic way - using a toothpick. If the oven bakes unevenly, then after 15-20 minutes you can turn the pan, then the casserole will bake equally on all sides. During cooking, the casserole will rise, brown well and cook through. The finished casserole can also be sprinkled with powdered sugar. Enjoy your tea!
