STEP 1

Prepare all ingredients. Buy butter with a fat content of 72% or higher. Before use, be sure to sift the flour to remove all specks or saturate it with oxygen. Take a small egg. Milk or dark chocolate is suitable.
STEP 2

Remove the butter from the refrigerator, but not from the freezer. It shouldn't be very hard. Cut it into small pieces and place in a deep mixing bowl. This process can be done in a food processor or dough mixer if you have such equipment. I will do everything with a hand mixer, although you can do it by hand.
STEP 3

Add granulated sugar.
STEP 4

Whisk the contents of the bowl until the butter is white and fluffy. It took me 7-8 minutes, since my equipment is not very powerful (550 W). You focus on your technique. You may need more or less time to achieve the desired result.
STEP 5

Beat the egg into the whipped butter. Continue using the mixer until a homogeneous mass is formed. In my case it took 3-4 minutes.
STEP 6

Add the prepared flour. Mix with a mixer until smooth. There is no need to beat for a long time, the main thing is that there are no flour lumps.
STEP 7

As a result, you should get a sticky shortbread dough. There is no need to add flour if you want the baked goods to be crumbly.
STEP 8

Using a spatula, move the dough onto the cling film. Wrap it in it and put it in the refrigerator for 1-2 hours, you can leave it in the refrigerator overnight. The dough will become denser.
STEP 9

For convenience, divide the dough into two halves. While you work with one part, put the second in the refrigerator. Take two sheets of parchment. Dust a little with flour. Place a piece of dough and roll it out between two sheets of parchment into a thin layer.
STEP 10

To give it a shape, we need to cut out a bear. Molds can be bought in online confectionery stores or in supermarkets in the confectionery departments. To prevent the dough from sticking to the mold, dip it in flour and cut out the shape.
STEP 11

Gouge out the eyes with a skewer or other suitable object. Give each bear a nut. Secure the almonds with your hands. This will be our bump. Transfer the parchment with the preparations to a baking sheet and place in a hot oven for 8-15 minutes at 180 degrees. Baking time depends on the power of the oven. Focus on your technique. The indicated time may vary up or down.
STEP 12

Cool the finished cookies to room temperature.
STEP 13

Take a piece of chocolate. Place it in a small disposable piping bag. Dip into boiling water several times to melt the chocolate. Cut a small hole at the bottom and make chocolate eyes. That's all the “Bear with a Pine” cookies are ready.
