  1. STEP 1

    STEP 1

How to make cold borscht with sausage? Prepare your food. Pre-boil the potatoes and eggs and cool; you will need the beets raw. If possible, choose sausage of good quality, the highest grade.

  2. STEP 2

    STEP 2

Wash the beets well and peel them. Grate it on a coarse grater.

  3. STEP 3

    STEP 3

Fill the beets with cold, clean water and place on the stove over low heat. As soon as the water with the beets boils, pour vinegar into it - it will help preserve the bright color of the beets. Turn the heat to low and simmer the beets for about 15 minutes. Then turn off the heat and leave the beet broth to cool. Taste it and add vinegar and possibly sugar to taste - the broth should be tasty.

  4. STEP 4

    STEP 4

Boil the potatoes in their skins. How to boil potatoes in their jackets? Wash the tubers well, pour cold water in a saucepan and cook over low heat. After boiling, cook the potatoes for 20-25 minutes, depending on the size and variety. Check readiness with a sharp knife - it will easily pierce the tuber. Cool the boiled potatoes completely, peel and cut into small cubes.

  5. STEP 5

    STEP 5

How to hard boil eggs? To prevent eggs from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after boiling, then cover with cold water and cool. The shell will be better cleaned from a sharp temperature change. Cut the peeled eggs into the same cubes as the potatoes.

  6. STEP 6

    STEP 6

Peel the sausage from the casing and cut it again into cubes. Dishes cut into identical pieces look more aesthetically pleasing.

  7. STEP 7

    STEP 7

Wash the cucumbers and cut off the ends. Cut the cucumbers into cubes. Alternatively, you can grate them on a coarse grater. Be sure to try to see if the cucumbers are bitter - otherwise they will ruin the taste of the soup.

  8. STEP 8

    STEP 8

Wash and dry the dill, tear off the thick stems. Finely chop the greens.

  9. STEP 9

    STEP 9

Also wash and dry the green onions well. Cut the onion into small pieces.

  10. STEP 10

    STEP 10

Place all ingredients in a bowl.

  11. STEP 11

    STEP 11

Add salt and stir the borscht base.

  12. STEP 12

    STEP 12

Before serving, place the base in a plate and pour cold beet broth over it along with the beets. Add sour cream to taste.

  13. STEP 13

    STEP 13

Serve the borscht to the table. Bon appetit!

It’s the first days of June, and it’s hot here - 35 degrees, so the recipe for cold borscht with sausage came in very handy. Somehow I usually ignored cold beetroot pancakes, but this time I decided to diversify the summer menu. Just in case, I reduced the amount of ingredients (which I later regretted)))). Everyone liked this cold borscht. It perfectly combines the acidity and light sweetness of beets, the freshness and aroma of dill and cucumber, potatoes, eggs and sausage making it quite satisfying. The verdict is clear: I will cook again! Thanks for the recipe, katushafin!

Thanks for the recipe! Summer is coming and it's time to prepare cold beetroot borscht with sausage. They can easily feed the whole family and leave no one hungry. In addition, this dish is great for cooling in hot heat. In addition to the listed ingredients, I add some potatoes to my cold borscht; this makes the borscht more filling. During particularly hot weather, keep all foods in the refrigerator. In particular, eggs and sausage, so that there is no risk of food spoilage and poisoning.
