STEP 1
How to make a classic cottage cheesecake? Prepare your ingredients. All products should be at room temperature, then the cake will rise well and be tasty. Therefore, remove eggs, butter and cottage cheese from the refrigerator in advance. Choose high-quality, natural cottage cheese and butter without milk fat substitutes.
STEP 2
Beat softened butter with sugar with a mixer.
STEP 3
Add cottage cheese and eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 4
Beat everything again with a mixer to obtain a homogeneous mass.
STEP 5
Grate the lemon zest directly into the bowl on a fine grater and add vanilla, stir.
STEP 6
Add sifted flour and combined with baking powder. Stir until smooth. The dough turns out very thick. Place it in a foil (or parchment) lined and greased pan. Place the pan with the dough in an oven preheated to 180 degrees for about 45 minutes (we rely on your oven). Check the readiness of the cake with a wooden skewer. Remove it from the oven, cool, and remove from the mold.
STEP 7
While the cake is cooling, melt the chocolate (it’s better to use dark chocolate, it will add a special taste to cottage cheese cakes). Decorate the cake with fresh raspberries and pour over the melted chocolate. Serve. Bon appetit!
