Christmas goose in the oven with honey and fruit

STEP 1
1. Let's start by preparing the goose. We cut off its wings and get rid of excess fat in the tail area. It is also very important to remove the goose's musk glands so that the smell is not too strong.
STEP 2
2. Next, prepare the marinade. Grind black and pink peppercorns. Add 3 pinches of salt and olive oil to bind the spices. Coat the goose with this mixture (also from the inside).
STEP 3
3. Let's start preparing the mixture for stuffing the goose. Cut half a quince, a whole orange into cubes and a green apple. Add dried apricots and prunes to the cubes. Salt our sweet preparation and add 1 pinch of duck spices. Fill the goose with our mixture.
STEP 4
4. Now we just have to sew up our goose. For this we need wooden skewers and thread. We pierce the goose horizontally with skewers and wrap it with thread. The tail can be tucked inside. To prevent the goose's limbs and necks from getting burned, you need to wrap them in foil. We place our goose in the sleeve and leave to marinate for 2-3 hours.
STEP 5
5. How long should we cook our goose? The principle is very simple: no matter how many kilograms a goose weighs, that’s how much we will cook it. (Cook in the sleeve for 4 hours, fry for 1 hour).

6. After 4 hours, take the goose out, remove it from the sleeve and drain the fat. We use some of the fat for golden brown crust. Place the goose on a baking sheet and coat with a mixture of fat and honey. Place in the oven for 15 -20 minutes
STEP 7
7. While the goose is cooling, we will prepare the cranberry sauce. Grind the cranberries together with water in a blender and bring to a boil. Add salt, honey and spices for the goose to the boiling cranberries. Our sauce is ready!
