Chorba soup

    How to cook chorba soup? Prepare all the necessary ingredients. Choose good beef, veal or lamb on the bone for the soup, preferably ribs or brisket. How to choose the perfect cooking pot, read the link in the article at the end of this recipe.

    Wash the meat in running water, dry it, chop it into large pieces, put it in a saucepan along with peeled onions, washed green stems, parsley root, bay leaves, peppercorns and clove stars. Pour water into the pan, bring to a boil and skim off the foam. Reduce heat and simmer until meat is cooked through. It took me 1.5 hours to do this.

    In the meantime, let's take care of the vegetables for the classic chorba. Wash the beans, dry them, remove the ends and cut into cubes. Wash the potatoes and carrots in running water with a brush, peel them and cut the potatoes into cubes and the carrots into large slices. If desired, you can change the cutting method to your liking.

    Peel the cabbage from the top leaves, rinse and chop with a knife. Wash the bell pepper in running water, dry, remove the stem and seeds, and cut into cubes.

    About 15 minutes before the meat is ready, add carrots to the broth. When the meat is cooked, remove everything from the pan except the carrots. Cut the meat into pieces, remove the bones and return to the broth. Add potatoes and beans, cook over medium heat for 15 minutes.

    Peel the onion and cut into cubes. Wash the tomato in running water, dry it and also cut into cubes.

    Wash parsley and cilantro in running water, dry and chop with a knife. Peel the garlic, crush it with a knife and chop finely. If desired, you can chop the garlic with a press or on a fine grater.

    Fry the onions and tomatoes in a heated frying pan in oil until mushy. Stir occasionally.

    Add cabbage and red pepper to the soup. Cook for another 10 minutes.

    Add vegetable dressing and dry paprika. Cook for 7 minutes.

    As a final touch, add the herbs and garlic. Turn off the stove and let the Bulgarian chorba with beans and cabbage brew for a while under the lid. Serve with lemon juice. Serve the sour cream separately. Bon appetit!

Thank you for the recipe, the smell from the soup in the apartment was simply gorgeous, once again I am convinced that spices make all the difference)) In principle, the soup is very much reminiscent of our good old Shchi, but with the addition of bright ingredients that open up the dish from a new side. In any case, I’ll add the recipe to my notes, I think I’ll cook it again))

This soup reminded me of solyanka. The recipe also contains beef and various vegetables. Tasty and satisfying!

I made chorba soup for lunch. Instead of beef, I took pork. I didn’t have green beans, so I didn’t replace them with anything. I cooked the soup in two liters of water. Thanks to the variety of ingredients and spices, the soup got a very rich taste. Chorba soup is aromatic, bright, beautiful, and just its appearance pleases the eye. And it tastes wonderful. The soup turned out quite thick. The whole family liked it. Thank you very much for the recipe!
