STEP 1
How to make chocolate banana cake? First of all, prepare the sponge cake. How to make a sponge cake? Break the eggs into a bowl and mix lightly with a whisk. Add sugar and stir until sugar is completely dissolved. If the sugar does not dissolve well, place the bowl in a water bath, heat until warm (not hot!), and, stirring with a whisk, dissolve the sugar.
STEP 2
Then beat the eggs and sugar with a mixer at high speed until light and creamy. The mass will increase approximately 3 times.
STEP 3
Sift flour, cocoa powder and baking powder into a bowl. Mix until you get a smooth brown dough.
STEP 4
Melt the butter and cool it. Add melted butter to the dough and mix well. For better mixing, I recommend adding a spoonful of batter to the butter first, mixing well. Then pour the resulting mass back into the dough and mix well again.
STEP 5
Line a baking pan with parchment and make a rim out of it. Pour the dough into the mold and place in the oven, preheated to 180°C. Bake the biscuit for 20-25 minutes. I use a mold with a diameter of 16 cm. It is more convenient to cut out the parchment side and bottom with scissors.
STEP 6
Remove the finished biscuit from the oven. First, cool it a little in the mold, then remove from it and leave to cool. Remove the parchment from the completely cooled cake.
STEP 7
Cut the biscuit into three parts.
STEP 8
Prepare the cream. How to make cream? Melt the chocolate in a water bath. To do this, pour water into a saucepan, place it on the stove and wait until the water boils. Remove the saucepan from the stove and place a bowl of chocolate on top, after finely breaking it. The bowl should be larger than the diameter of the saucepan, the bottom of the bowl should not touch the water. Stir the chocolate until it is completely melted. Cool the chocolate to room temperature.
STEP 9
Beat the cream with a mixer into a fluffy mass until soft peaks form.
STEP 10
Add the cooled chocolate to the cream and beat with a mixer until you obtain a thick cream of a uniform color.
STEP 11
Slice the bananas into thin slices.
STEP 12
Assemble the cake. Take one cake layer and soak the surface with sugar syrup. It is more convenient to apply the syrup with a pastry brush, but I used a spatula.
STEP 13
Place the cream on the biscuit and spread it over the entire surface with a knife. Place banana slices on top.

Place the cream on top again and spread it over the entire surface with a knife.
STEP 15
Then place the second cake layer on top and repeat the previous step. Soak the sponge cake with syrup, spread the cream, lay out the bananas, spread the cream. Place the third cake layer on top.
STEP 16
Spread the remaining cream over the entire surface of the cake. Level the surface and sides using a knife or spatula
STEP 17
Prepare the chocolate glaze. How to make glaze? Heat the cream to 80-85°C (it should become noticeably hot) and pour it into a bowl. Finely chop the chocolate and add it to the cream. I used chocolate chips instead of chocolate bars.
STEP 18
Stir the chocolate until it is completely melted. If the cream cools quickly and the chocolate does not melt, place the bowl in a water bath and stir until the chocolate is completely melted.
STEP 19
Cool the glaze to room temperature and pour it over the cake. You can pour over the entire surface of the cake, or decorate the cake only around the edges, as I did.
STEP 20
For decoration, cut the banana into pieces and place them along the edge of the cake. I cut the banana into large pieces, you can cut it into thin pieces and decorate the entire surface of the cake with them. The cake is ready. Place it in the refrigerator to soak for 2 hours, then serve. Bon appetit!
