Step-by-step preparation

Cooking timeCooking time: 7 hr 30 mins
  1. STEP 1

    STEP 1

Soak the Mistral pinto beans for 4 hours, cook for 1.5 hours, add salt at the end, and drain the broth.

  2. STEP 2

    STEP 2

Grind the boiled beans in a blender to a paste.

  3. STEP 3

    STEP 3

Finely chop the onion, fry in vegetable oil along with mushrooms (I have 200 grams of boiled honey mushrooms, you can use any mushrooms). Mix the fried mushrooms with the bean pate and grind in a blender, but not into a paste; small pieces of mushrooms should remain.

  4. STEP 4

    STEP 4

Mix minced meat with 1 tbsp. a spoonful of paprika, nutmeg. cardamom, with 1 teaspoon of dry garlic, salt and pepper, mix well. Spices to taste.

  5. STEP 5

    STEP 5

Now remove the bones from the chicken, leaving the skin and meat. You can prepare the chicken in advance, but this procedure takes me very little time, about 15 minutes, it is not at all as difficult as it seems. Cut the chicken along the back and carefully use a sharp knife to separate the back and breast bones from the meat.

  6. STEP 6

    STEP 6

Now you need to remove the bones from the legs, use a knife to remove meat from the bones, trimming the tendons, and cut the bones at the joints. Trim the wings, leaving only the upper part, from which remove the bone. Trim the tail; if there is fat, remove it as well.

  7. STEP 7

    STEP 7

Turn the cut chicken carcass upside down with meat and beat it with a hammer through cling film, add salt and pepper.

  8. STEP 8

    STEP 8

Place the minced meat on the chicken, stuffing the minced meat into the legs as well.

  9. STEP 9

    STEP 9

Place the bean-mushroom mixture on the minced meat

  10. STEP 10

    STEP 10

Roll up the chicken carcass, sew it up with threads along the back (the most common ones for sewing), leaving the long ends of the thread on both sides without knots, pull one of the ends of the finished chicken and pull it out (thread), tie the legs with twine. Place on a baking sheet lined with parchment, seam side down (you can do without paper)

  11. STEP 11

    STEP 11

Mix sour cream, 1 tbsp. l. with a large heap of paprika, 1 tsp dry garlic and salt, mix

  12. STEP 12

    STEP 12

Coat the chicken with sour cream mixture and bake in an oven preheated to 170 degrees for 90 minutes. Leave on the baking sheet to cool.

  13. STEP 13

    STEP 13

Remove threads and twine from the finished chicken.

  14. STEP 14

    STEP 14

    Finita! Bon appetit!

A masterpiece worthy of admiration!!! I’ll be happy to take it into my K/K, and as soon as I learn what is described in steps 5-6, I’ll definitely please my husband with this dish. For the first time, I regret that I’m not a good cook, but thanks to such recipes I really want to learn. I hope it works... just give it time. Thanks for the recipe!
