Anait, they are not crispy, on the contrary, they are very soft and juicy, because during baking they are soaked in egg and milk filling. I didn’t even expect that the pie would have such a delicate consistency; it could easily be broken with a fork. But the cheese crust on top is crispy (but this also depends on the type of cheese, probably)

Irisha, yes, I also had the idea of ​​adding mushrooms, but I was too lazy to go to the store for them))) In general, the pie is so successful that I will definitely try it with other fillings: you can take sweet cottage cheese with raisins or salty cottage cheese with herbs, you can fill the pancakes with boiled condensed milk or grated apples with sugar. If the filling is sweet, instead of cheese you can have an almost finished pie, when all the filling is absorbed and thickened, sprinkle with sugar and bake under the grill, there will be a crispy sugar crust. I did this with individual pancakes and it turned out great! I think it will be no worse with pie.
